Potato, Zucchini and Chickpea Curry

  • 1 zucchini
  • 3 middle-size fresh potatoes
  • 2 tomatoes
  • 1 can chickpeas
  • 1-2 cloves of garlic
  • 1 tsp garam masala spices
  • 1/2 tsp dried chilli flakes
  • 1/4 tsp turmeric
  • fresh parsley
  • sea salt
  • 1 tbsp oil for cooking
  1. Cut potatoes into wedges. Heat the oil in a pan and add the potatoes.  Cook about 4 min., allowing them to become lightly golden. Place potatoes on the paper towel and allowing oil to drain off.

  2. In a pan, add garlic, chilli flakes. Cook about 30 s. Add chopped zucchini, tomatoes and potatoes. Pour 2 tbsp. water. Cook on a low heat about 15 min. 

  3. Finally, add chickpeas, garam masala, turmeric, salt and cook for 5 min. Top with parsley.

Serve with rice.
