Broccoli and Cherry Tomato Salad

Ingredientai
  • 1 broccoli, separated into florets
  • 300 g cherry tomatoes, half-cut
  • 100 g salad mix (rucola, beetroot leaves, green lettuces)
  • 1 cup chickpeas canned, washed with water
Dressing
  • 4 tbsp pumpkin seed oil
  • 1,5 tbsp mustard
  • 2 tbsp apple cider vinegar
  • 1 clove of garlic, finely grated
  • 1 tsp brown sugar
  • pinch of salt
Gaminimas
  1. Blanch broccoli florets. Keep in a boiling water for 3 min. Rinse broccoli with cold water and drain.

  2. In a small bowl, whisk together all of the dressing ingredients.

  3. In a big bowl, combine broccoli florets, tomatoes, and dressing. Keep for about 30 min.

  4. In a plate, add salad mix, then broccoli and tomatoes. Top with chickpeas.
