Place the oatmeal to a food processor and blend until flour.
In a small bowl, combine all dry ingredients. In a separate bowl, whisk together all wet ingredients. Pour dry into wet, and stir together. Let the batter sit for 5 min.
Heat the skillet and grease with coconut oil. Pour 1,5 tbsp batter for one pancake. Cook for 2 min., then flip and cook on the other side.
