Preheat oven to 170 C temp.
In a big bowl, combine sweet potato, 1 tbsp olive oil, a pinch of salt and black pepper. Add them on a baking sheet, lined with parchment paper. Bake about 30-35 min. or until fork-tender. Don't forget mix with a spatula after 15 min. of baking.
Cook the bulgur according to package directions.
In a big bowl, combine the sweet potato, bulgur, spinach, cashew, lemon juice, 2 tbsp olive oil, salt, pepper. Serve with avocado cubes.
*baked 140 C temp. 5-7 min in the oven.
Serve warm or cold.
