Ingredientai
  • 3 c sweet potato, cut into cubes
  • 1/2 c bulgur (1 1/2 c boiled)
  • 1/2 c cashew*
  • handful of fresh spinach, roughly chopped
  • 1/2 avocado, cut into small cubes
  • salt and black pepper
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
Gaminimas
  1. Preheat oven to 170 C temp.

  2. In a big bowl, combine sweet potato, 1 tbsp olive oil, a pinch of salt and black pepper. Add them on a baking sheet, lined with parchment paper. Bake about 30-35 min. or until fork-tender. Don't forget mix with a spatula after 15 min. of baking.

  3. Cook the bulgur according to package directions.

  4. In a big bowl, combine the sweet potato, bulgur, spinach, cashew, lemon juice, 2 tbsp olive oil, salt, pepper. Serve with avocado cubes.

Serve warm or cold.
