Ingredientai
  • 6 large eggs
  • 1/3 c milk (I used dairy-free oat milk)
  • 1 c fresh spinach, roughly chopped
  • 1 red pepper, cubed
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp dried basilico
  • 1 salt and black pepper
  • 1/3 c cheese, shredded (I used Emmental cheese) (optional)
Gaminimas
  1. Preheat oven to 180 C temp

  2. In a big bowl, lightly beat the eggs. Add all ingredients, except cheese. Mix until combined.

  3. Pour the mixture into silicone muffins moulds. If you use metal moulds, don't forget to grease them.

  4. Sprinkle with cheese over the top.

  5. Bake about 30 min.
