Vegan Crepes with Veggies

Ingredientai
Crepes
  • 1 1/2 c Graham flour
  • 2 c dairy-free milk
  • 1/4 tsp baking powder
  • 1 tsp sugar
  • pinch of sea salt
  • 2 tbsp oil (1 tbsp to the batter, 1 - for cooking)
Filling
  • 1 small zucchini, cut into small slices
  • 1 red pepper, cut into small slices
  • 1 yellow pepper, cut into small slices
  • 2 tbsp ketchup
  • 1 clove of garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1/3 tsp coriander
  • pinch of chili
  • pinch of sea salt, black pepper
  • oil for cooking
Avocado sauce
  • 1 big avocado
  • 1 tbsp fresh lemon juice
  • 4-6 tbsp water
  • 1/8 tsp garlic powder
  • pinch of sea salt, black pepper
Gaminimas
  1. In a skillet, heat the oil. Add the garlic and cook, stirring, about 30 s.

  2. Add the peppers, pour 1/4 c of water. Reduce the heat to medium and cook a few minutes. Add the zucchini.

  3. Cook for 4-5 min., stirring occasionally, or until the veggies are fork tender. Add the spices, ketchup, parsley. 

  4. Transfer the veggies to the bowl and cover.

  5. In a big bowl, lightly whisk all crepes ingredients.

  6. In a skillet, heat the oil. Pour 1/3 c of batter. Cook for 2-3 min., then flip and cook shortly on the other side.

  7. In a food processor, add all sauce ingredients. Pulse until puree.

  8. Serve the crepes with veggies and sauce.
