Lightly pound the chicken breast (you can slice the breast in half to make them thinner). Combine with marinate ingredients and let to sit at room temp. about 20 min.
Heat the oil in a skillet or grill over medium-high heat. Cook 6-8 min per side.
Remove from a skillet and allow to rest for 5 min. Then slice.
In a small bowl, combine all dressing ingredients.
In a big bowl, combine all ingredients for the salad. Top with chicken and drizzle with dressing.
