Grean Bean and Summer Vegetable Curry

Ingredientai
  • 3 medium-size tomatoes, chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/3 c water*
  • 200 g green beans
  • 3 c zucchini, sliced
  • 1 medium-size carrot, julienned
  • 1 yellow pepper, chopped into strips
  • 60 g chantarelles
  • 3 spring onion, chopped
  • handful of fresh dill, finely chopped
  • handful of fresh parsley, finely chopped
  • 1 tsp paprika powder
  • sea salt, black pepper
  • oil for cooking
Gaminimas
  1. Wash the beans, cut off the tips. Cut in half. Heat the pot with salted water. Place the beans. Cook for 4 min, until a bit tender.

  2. Heat the oil in a big skillet. Add the onion and cook about 4 min. Add the garlic and cook about 1 min.

  3. Add the tomatoes. Reduce the heat to low and simmer about 10 min. or until puree.

  4. Pour the water. Add the paprika powder, salt, pepper and combine.

  5. Add all veggies and simmer about 10 min. or until fork-tender.

  6. Add the dill parsley, spring onion, season with salt and pepper. Turn off the heat and let sit for about 10 min.
