Crustless Zucchini and Feta Quiche

Ingredientai
  • 1 (280 g) small zucchini
  • 6 small eggs
  • 1/3 c milk (I used oat milk)
  • 150 g feta cheese
  • 1 c cheese, grated (I used Edam cheese)
  • 1 tomato, sliced
  • 4 tbsp dill, chopped
  • 1/3 tsp oregano
  • 1/3 tsp basil
  • pinch of black pepper, sea salt
Gaminimas
  1. Preheat oven to 200 C temp. In a big bowl, lightly whisk the eggs. Add the milk, crumbled feta, seasoning, dill, 1/2 c of cheese.

  2. Thinly slice the zucchini. Cut them in half.

  3. Add a big part of zucchini into the mixture.

  4. Grease 24 cm round pan. Pour the mixture into a pan. Add the tomato slices and remaining zucchini slices. Sprinkle with 1/2 c of cheese.

  5. Bake about 30 min. Remove from oven. Eat after 10 min.
