French Toast with Caramelized Apricots

French toast
  • 4 bread slices
  • 2 eggs
  • 1/3 c milk (I used oat milk)
  • 1/2 tsp cinnamon
  • pinch of sea salt
  • butter for cooking
  • sugar powder, for dusting
Caramelized Apricots
  • 4 apricots, halved
  • 2 tbsp Greek nuts, chopped
  • 1 tbsp butter
  • 2 tbsp honey or maple syrup
  • 1/2 tsp cinnamon
  • pinch of sea salt

Caramelized Apricots
  1. In a pan, melt the butter over medium heat. Add the honey, cinnamon, salt, stir to dissolve. Wait until the mixture is lightly bubbling.

  2. Add the apricots, nuts and combine with a mixture. Cook about 3-4 min on until the apricots are tender.

French toast
  1. In a big bowl, lightly whisk the eggs, milk, cinnamon, salt.

  2. In a skillet, melt the butter over medium heat.

  3. Dip slices of bread into the egg mixture. Place in a skillet.

  4. Cook about 2-3 min or until lightly brown, then flip and cook on the other side.

  5. Place in a plate and dust with sugar powder. Add the apricots on top.
