Beetroot Hummus (+Chantarelle Toast)

Ingredientai
Hummus
  • 1 medium beetroot, boiled
  • 1 can of hummus (380 g, drained weight 230 g)
  • 1 tahini
  • 2 tbsp olive oil
  • 3-4 tbsp lemon juice
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • pinch of sea salt, black pepper
Toast
  • bread
  • handful of chantarelles
  • 1 tbsp parsley, chopped
  • 1 tbsp cream
  • olive oil for cooking
  • pinch of sea salt, black pepper
Gaminimas
  1. Add beetroot into a food processor and blend until smooth. Add chickpeas and other ingredients.

  2. Blend until smooth. If too thick, add more water. If need more taste, add more seasoning, lemon juice.

  3. Before serving, drizzle olive oil over hummus.

Toast
  1. Toast slices of bread in oven or toaster.

  2. In a skillet, heat olive oil over medium heat. Add chantarelles and stir-fry about 4 min. Add cream, parsley, salt, pepper, and stir.

  3. Spread toast with hummus and top with chantarelles.
