Warm Zucchini and Pearl Barley Salad

  • 2/3 c pearl barley, uncooked
  • 1 small zucchini, sliced
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 corn*
  • pinch of sea salt, black pepper
  • olive oil
  • 3 tbsp olive oil
  • 2/3 fresh lemon juice
  • 3 tbsp fresh parsley, chopped
  • pinch of sea salt, black pepper
  1. Cook the pearl barley following pack instructions.

  2. Preheat oven to 170 C temp., using "grill + fan".  Line a baking sheet with parchment paper.

  3. Transfer zucchini, peppers, corn on a baking sheet. Drizzle with olive oil, sprinkle with sea salt, black pepper.

  4. Bake about 17-20 min.

  5. Place the baked corn on a plate and cut the kernels from the cob.

  6. In a big bowl combine vegetables ar pearl barley. Drizzle with olive oil, lemon juice, add parsley, garnish with sea salt, black pepper.


*you can choose canned or frozen corn kernels.
