Cook the pearl barley following pack instructions.
Preheat oven to 170 C temp., using "grill + fan". Line a baking sheet with parchment paper.
Transfer zucchini, peppers, corn on a baking sheet. Drizzle with olive oil, sprinkle with sea salt, black pepper.
Bake about 17-20 min.
Place the baked corn on a plate and cut the kernels from the cob.
In a big bowl combine vegetables ar pearl barley. Drizzle with olive oil, lemon juice, add parsley, garnish with sea salt, black pepper.
*you can choose canned or frozen corn kernels.
