Preheat oven to 180 C temp. Line a baking sheet with parchment paper.
Transfer sweet potato. Drizzle with olive oil, sprinkle with sea salt, black pepper, red paprika powder.
Bake about 20-25 minutes, using "grill and fan".
In a small bowl, combine all dressing ingredients.
Place lettuce mix on the plates. Top with sweet potato, tomatoes, mozzarella, drizzle with dressing.
