In a skillet, heat the oil over medium heat. Add the onion, garlic. Cook, stirring frequently, about 4 min.
Add the ground chicken. Cook, stirring frequently, about 5-6 minutes or until no longer pink.
Add the tomato paste, parsley or cilantro, season with spices, salt. Cook about 1 minute.
Brush the top side of tortillas with tomato sauce. Add 2 tbsp cheese, 3-4 tbsp chicken, then 2 tbsp cheese over the one-half side.
Clean the skillet, heat the oil over medium heat. Add 2 tortillas and cook until lightly golden. Cut into 2 pieces.
Serve with Mexican dipping sauce, Greek yogurt.
