Ingredientai
Base
  • 1 cup (110 g) almonds
  • 1/2 cup (50 g) pecans
  • 1/2 cup (66 g) pitted dates, soaked in lukewarm water about 15 min.
Mixture
  • 2 cups (250 g) cashews, soaked overnight and drained
  • 1/2 cup (120 g) yogurt (I used oat yogurt)
  • 1 lemon juice
  • 1 cup (135 g) strawberries
  • 1/3 cup (60 g) strawberries for the sides
  • 4-5 tbsp maple syrup
  • 1/4 cup (30 g) cacao butter, melted
  • 5 g (1 1/2 tbsp) agar agar
  • 1 tsp vanilla extract
  • sea salt

Base
  1. Add the nuts to a food processor. Pulse them until they are coarsely crushed. Gradually add 1-2 dates, until the mixture forms into a ball.

  2. Add the crust mixture into a round cake pan (20 cm) with parchment paper and slightly press with fingers to even.

Mixture
  1. In a food processor, add the cashews, maple syrup, lemon juice, melted cacao butter, vanilla extract, salt and blend until creamy and smooth. Add the strawberries, blend until smooth.

  2. In a small saucepan, add the yogurt and agar agar powder. Stir together. Let rest for 5 min. Heat to boiling (about 85 C), stirring the agar agar is dissolved about 5-8 min.

  3. Cut finely the remaining strawberries. Put them on the sides of the pan.

  4. Add the yogurt into a food processor. Place the mixture on the base. Keep the cake in the refrigerator for a few hours or overnight.
