In a bowl, mix water, yeast, and 1 tbsp flour. Leave for 5-10 min. to activate.
Add 1 cup flour, olive oil, salt, spices into a yeast mixture. Mix with spatula or hands until combined. Add another 1/4 cup flour and knead the dough with hands a few minutes until soft, smooth.
Form the dough into a ball, cover and let it sit for 20 min. Preheat the oven to 220 C.
Spread the flour on the dough and surface. Shortly knead. Form, using hands or rolling pin, into 20-22 cm circle. Transfer the dough to a baking tray covered with parchment paper.
Spread the pizza sauce on the crust, splash olive oil (Leave the pizza edges dry). Add vegan cheese, zucchini, red pepper, spices. Add more vegan cheese on the top. Bake for 12-14 min.
