Preheat the oven to 190 C. In a big bowl, mix the cauliflower with spices, oil, and sauce. Line a baking tray with parchment paper. Place the cauliflower on the baking tray. Roast for 15-20 minutes or until the florets are tender.
In a small bowl, mix the yogurt with lime juice, spices, and parsley or cilantro.
Place the lettuce, 2-3 tbsp cauliflower, tomato, avocado, onion, pepper on the tortilla. Drizzle the sauce on top.
