Ingredientai
  • 1 small (750 g) Hokkaido pumpkin
  • 400 g minced chicken
  • 1 yellow pepper, diced
  • 2 jalapeños, finely diced
  • 1 onion, diced
  • 2 cloves of garlic, crushed
  • 1 can (230 g) red beans
  • 1 can (400 g) diced tomatoes
  • 1 1/2-2 c water
  • 1 vegetable broth
  • 1 tbsp oil for cooking
Spices
  • 2 tsp chilli
  • 1 tsp cumin
  • 1 tsp coriander
  • black pepper
  • salt
Gaminimas
  1. Wash and peel the pumpkin. Cut into small cubes.

  2. In a large pot, heat the oil. Add the onion, jalapeños. Cook for about 3 min. Add the garlic. Cook about 30 s.

  3. Add the minced chicken. Cook for a few minutes. Add the spices, salt, pepper, pumpkin. Stir and cook about 3-4 min.

  4. Add the tomatoes, vegetable broth, pour the water. Bring to the boil. Reduce the heat to low and simmer about 20 min. Add the beans and simmer about 5 min.

  5. Remove from heat and keep up for 10 min. Taste and add more chili or salt if needed.
