In a middle saucepan, add the syrup, sugar, butter, spices, lemon juice. Heat on the low temp., stirring occasionally, until melted.
Let cool to room temperature. Meanwhile, sift the flour. In a big bowl, combine the flour, salt, and baking soda.
Add the cream, mix until combined. Add the flour twice. Firstly, mix with a spatula, then with hands, until the dough just combined. Later the dough becomes more firm. Chill in the refrigerator for about 20-30 min.
Preheat the oven to 170 C temp.
On a lightly floured surface, roll out the part of the dough until it's very thin. Using cookie cutters, cut the dough into desired shapes. Transfer the cookies to a sheet pan lined with parchment paper.
Bake for about 7-10 min.
