Lemon Garlic Salmon with Veggies

Salmon
  • 2 salmon fillets (2*225 g)
  • 1 tbsp butter, melted
  • 2 cloves of garlic, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, finely chopped
  • 1/4 tsp chili flakes
  • pinch of sea salt
  • pinch of black pepper
  • lemon slices
Potatoes
  • 600 g potatoes, cut in quarters
  • 1 tsp olive oil
  • 1 tsp red pepper
  • pinch of sea salt
  • pinch of black pepper
Other ingredients
  • 1 c broccoli, separated into florets
  • lettuce mix
  • rucola
Gaminimas
  1. Preheat oven to 200 C. Line a baking pan with parchment paper. Transfer the salmon on the pan.

  2. In a small bowl, stir together melted butter, lemon juice, salt, pepper, parsley garlic. Pour over the salmon. Sprinkle with chili flakes.

  3. In a big bowl, combine the potatoes, olive oil, spices. Line a baking sheet with parchment paper. Transfer the potatoes on the sheet, trying not to touch each other. Bake about 18 min.

  4. After that time, transfer the sheet on the bottom of the oven. Place the salmon and bake about 12 min.

  5. Blanch the broccoli florets. Keep in boiling water for a few minutes, drain.

  6. Serve with lettuce mix, rucola. Drizzle with olive oil (optional).
