Buckwheat and Broccoli Salad

Ingredientai
  • 1 small broccoli, separated into florets
  • 2/3 c uncooked buckwheat
  • 2 c lettuce, chopped
  • 1/2 avocado, chopped
  • 1/2 c feta
  • pinch of salt
  • pinch of black pepper
Dressing
  • 3 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey*
  • 2 tbsp fresh lemon juice
Gaminimas
  1. Cook the buckwheat according to package directions.

  2. Lightly heat the skillet. Pour 1/3 cup of water, add the broccoli. Cook, stirring occasionally, about 6-8 min. If needed, add more water. Add the salt and black pepper.

  3. Make the dressing. In a small bowl, combine all ingredients.

  4. In a plate, add the lettuce, then buckwheat, broccoli, avocado. Sprinkle with feta. Pour dressing on top.

  5. Serve warm or cold.
