Creamy Salmon with Spinach and Tomatoes

Ingredientai
Salmon
  • 750-850 g salmon fillet, cut into 4-5 pieces
  • pinch of sea salt and black pepper
  • splash of fresh lemon juice
  • 1-2 tbsp oil for cooking
Sauce
  • 70 g baby spinach, washed and drained
  • 250 g cherry tomatoes, cut into half
  • 1/2 c low-fat cream (I used oat cream)
  • 1/2 c broth (1/4 of broth cube melt in 1/2 c hot water)
  • 1 clove of garlic, minced
  • 1 tsp butter for cooking
  • 2 tbsp fresh dill, finely chopped
  • 1 tsp corn starch/flour (combined with 3 tsp water)
  • 1 tbsp fresh lemon juice
  • pinch of black pepper
Gaminimas
  1. Season the salmon and sprinkle with lemon juice. 

  2. Heat the oil in a skillet. Add the salmon. Cook a few minutes on each side.

  3. Set aside the salmon. Clean the skillet with paper towel. Heat a skillet over medium heat. Melt the butter. Cook the garlic about 30 s. 

  4. Pour the cream, broth and corn starch/flour, combined with water. Stir and heat until bubble. Reduce the heat to low.
  5. Add the spinach. Stir for about 1 min. Add the tomatoes, dill, lemon juice, season with pepper. Stir to combine. Add the salmon. Cook for 3-4 min.
