Ingredientai
Meatballs
  • 500 g ground chicken
  • 1 big carrot, finely grated
  • 4-5 tbsp breadcrumbs
  • 1 egg
  • 1 clove of garlic, minced
  • 1 tsp red curry paste
  • 1 tbsp soy sauce
  • 1 tbsp oil
  • pinch of sea salt, black pepper
Sauce
  • 1 can of light coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp peanut butter
  • 1-2 tbsp fresh lemon juice
  • 1 red pepper, julienned
  • pinch of sea salt, black pepper
  • 1 tbsp oil for cooking
  • chives, chopped (optional)
Gaminimas
  1. Preheat oven to 180 C temp. Line a baking tray with parchment paper.

  2. In a big bowl, combine all ingredients of meatballs. Form small 25 meatballs.

  3. Bake about 15 min.

  4. Heat the oil in a big skillet. Add the pepper. Stir about 3 min.

  5. Add the coconut milk, curry paste, peanut butter. Mix until combined. Reduce heat to medium and simmer about 8 min.

  6. Sprinkle with lime juice, salt, pepper. Add the meatballs. Simmer about 4-5 min. on the low temp. Garnish with chives (optional).

  7. Serve with rice or quinoa.
