Finnish Potato and Salmon Salad

  • 700 g small summer potatoes
  • 3 hard boiled eggs, cut into 4 pieces
  • 2 c lettuce, roughly chopped
  • 250 g cherry tomatoes
  • 1 c cucumber, sliced
  • 1/4 red onion, sliced
  • handful of fresh dill
  • 2 tsp butter
  • pinch of sea salt, black pepper
  • 300 g salmon (2 pieces of 150 g)
  • pinch of sea salt, black pepper
  • pinch of fish spices
  • oil for cooking
  • 5 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 2 tbsp mild mustard
  • 1/2 tsp brown sugar
  1. Boil the potatoes. Sprinkle with dill, melt the butter.

  2. Season the salmon with fish spices, salt, and pepper.

  3. Heat the oil in a skillet over medium-high heat. The top of salmon cook for 3-4 min. Turn the heat to medium, flip and allow to cook about 3 min. Then cook about 30 s each side.

  4. Cut the salmon into medium pieces.

  5. In a small bowl, combine all sauce ingredients.

  6. In a big bowl or plate, add lettuce. Then add the tomatoes, cucumber, tomatoes, eggs, salmon, onion. Season with salt, pepper. Drizzle with sauce and carefully mix.

  7. Serve warm or cold.
