Blueberry Mascarpone Streusel Cake

Cake
  • 1 1/2 c (190 g) flour
  • 2 eggs
  • 80 g butter
  • 1/2 c (100 g) butter milk
  • 1/2 c (80 g) sugar
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • pinch of salt
Filling
  • 250 g mascarpone
  • 3 tbsp sugar
  • 1 egg
  • 1 1/2 c blueberries
Streusel topping
  • 1/2 c flour
  • 1/4 c sugar
  • 3 tbsp butter
Gaminimas
  1. Preheat oven to 180 C temp. Grease the edges of 22 cm round cake pan, line the bottom with parchment paper.

  2. In a medium-size bowl, combine flour, baking powder, salt.

  3. In a big bowl, using the electric mixer, beat the butter and sugar until smooth and creamy.

  4. Add the eggs one at a time and lightly whisk.

  5. Add the buttermilk and vanilla extract. Whisk until smooth.

  6. Add the flour mixture and mix with a spatula until just combined. Spread the batter into a pan.

  7. Lighty whisk the mascarpone, egg, sugar and flour. Spread on the batter top. Drop the blueberries.

  8. In a small bowl, add all streusel ingredients. Combine with a fork or hands until forms small pieces. Drop on the cake top.

  9. Bake about 50-55 min. Remove from a pan when completely cool.
