Black Beans and Feta Stuffed Zucchini

  • 3 small zucchini
  • 1 (380/ 230 g) can of black beans, washed and drained
  • 1 red pepper, cubed
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1/2 c natural tomato sauce or tomato passata
  • 3 tbsp dill, chopped
  • 2/3 c feta, crumbed
  • 1 1/2 c cheese, shredded (I used mozzarella cheese for pizza)
  • oil for cooking
  • pinch of sea salt and black pepper
  1. Preheat oven to 180 C temp. Boil a large pot of water.

  2. Cut each zucchini in half. Scoop out the center of the zucchini. That part of zucchini place on the paper towel and remove water from zucchini. Then chopped.

  3. Add zucchini halves to a boiling water for 1 min.

  4. Heat the oil in a skillet over medium heat. Add the onion, garlic and red pepper. Cook about 4 min.

  5. Add the tomato sauce, 1/2 c of zucchini meat, dill. Season with salt and pepper. Cook about 2 min.

  6. Add the black beans, feta and combine.

  7. Grease a baking dish. Place zucchini halves in a baking dish. Fill each zucchini with filling. Top with cheese. Cover with parchment paper.

  8. Bake for 25 min.
