Gluten-Free Lemon Berry Cake

  • 4 eggs
  • 125 g mascarpone
  • 100 g sviesto
  • 2/3 c (130 g) sugar
  • 1 c (100 g) oat flour
  • 1 c (130 g) gluten-free flour
  • 4 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • pinch of sea salt
  • 1 1/4 c fresh or frozen berries (blueberries, raspberries)*
Gaminimas
  1. Preheat oven to 180 C temp.

  2. In a big bowl, using an electric mixer, beat butter, mascarpone, sugar, vanilla extract, lemon zest, juice until smooth and creamy.

  3. Add eggs one at a time and lightly whisk just until incorporated.

  4. In another bowl, combine flour, baking powder, salt. Add into the wet ingredients bowl. Mix with a spatula until just combined.

  5. Add berries and gently combine into a dough.

  6. Line loaf pan (25x11 cm) with a parchment paper. Pour dough into a pan. 

  7. Bake about 50-55 min.
