Moroccan Sweet Potato and Lentil Soup

Ingredientai
  • 1 (2 1/2 st.)  medium-sized sweet potato, cubed
  • 3/4 c red lentil
  • 2/3 c canned chickpea
  • 3 1/2 c broth
  • 1/2 c onion, chopped
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp red paprika powder
  • 1/2 tsp turmeric
  • 1/3 tsp cinnamon
  • 1/3 tsp cayenne pepper
  • pinch of sea salt, black pepper
  • 3 tbsp fresh lemon juice
  • oil for cooking
  • handful of coriander or parsley, chopped
Gaminimas
  1. Heat the oil in a saucepan over medium-high heat. Add the onion. Cook about 4 min. Add the garlic, paprika powder, turmeric, cumin, cayenne pepper, cinnamon. Cook about 30 s.

  2. Add the tomatoes, sweet potato, lentils, broth. Cover the pot and bring to the boil. Reduce the heat to low and simmer for about 12 min.

  3. Add the chickpeas, coriander or parsley, season with salt, black pepper, drizzle with lemon juice. If needed, add more seasoning. Cover the pot and let the soup sit about 5 min.
