Warm Salmon and Quinoa Salad

Ingredientai
  • 300 g salmon, sliced
  • 1/2 c quinoa
  • 1 c cucumber, chopped
  • 1 c cherry tomatoes, halved
  • 3/4 c canned corns
  • 1/3 c pecans, roughly chopped
  • fish seasoning
  • olive oil
  • lemon juice
  • parsley, finely chopped
  • sea salt, black pepper
Gaminimas
  1. Boil the quinoa in salted water for about 10-12 minutes.

  2. Heat the oil in a skillet over medium-high heat. Add the salmon, season with fish seasoning, pepper, salt. Cook for about 2-3 minutes on each side (don't overcook, that fish wouldn't be dry).

  3. In a bowl, combine all vegetables.

  4. To serve, place the quinoa, salmon, vegetables on the plates. Sprinkle with pecans, parsley, drizzle with lemon juice, olive oil. Season with pepper, salt.
