In a big pot, add the chicken, pour the water. Cover the pot and bring to the boil. Remove the water. Add new water, about 8-9 cup of water (cover the chicken).
Add all ingredients of the broth. Cover the pot and bring to the boil. Reduce the heat to low and simmer for about 1 hour 40 minutes.
Remove the chicken from the pot. When the chicken is cool, remove the skin and discard the bones, shred the meat with a fork or hands. Set aside.
Pour the broth through a sieve into a new pot. Add all ingredients of the soup. Cover the pot and bring to the boil. Reduce the heat to low and simmer for about 15 minutes or until the vegetables are fork-tender.
At the ending of simmering, add the chicken.
Add the butter, salt, pepper.
