Almond Date Energy Balls

  • 1 1/4 c almonds
  • 1/4 c almonds, to roll balls
  • 14-15 Medjool dates
  • 2 tbsp flax seeds
  • 1 tbsp cacao
  • pinch of salt
  1. In a food processor, pulse the almonds until small pieces. Remove 1/4 cup of almonds from the food processor and set aside.

  2. Add the cacao, flax seeds, salt, dates and pulse until combined. The texture shouldn't be dry or too sticky.

  3. Shape mixture into 16 balls, roll into the almonds.

  4. Transfer them to an airtight container. Keep in the refrigerator.
